Ive been a huge huge fan of the program on Fox Traveller called Eat Street.
The quality of food and the variety of cuisines available in the US or outside India is absolutely insane.
While the "bandi" or the "thela" culture is quite prominent in India, many of those options are limited to particular timings in a day.
While there have been famous bandi's in the old city, there were not many options where i stay : Hi tech city.
Recently that void was partially filled , thanks to Dosa Place.
It is an aesthetically designed food truck serving Dosa , hence the name dosa place.
Its a vehicle with cooking facilities , able to hold one person manning the stoves , 2 portable stoves behind it and one cashier. The roof rack holds a water storage unit for hand wash.
A lot of thought has gone into the design and building of this truck. Since everything was built around the theme of it being a food truck, area was always premium and its been used very intelligently. A lot of storage space is designed to store the chutneys or batter, the sides are used to stock raw materials or toppings, one side holds the cash register and overall the build looks nice and clean. For a first time entrepreneur into the food business, the amount of thought gone into building the vehicle and operation of the outlet is commendable.
From the lighting to the water storage to raw material storage to avoiding littering the place, most items seem to have been ticked off the list.
Dosa place also offers 4 varieties of chutneys which i think is novel for a food truck. Most of them are stored on board.
The menu board probably folds in to close the open serving area when the truck is in motion.
Hygiene has also played a part in the operation of the place with only 1 man doing all the cooking inside the truck and 2 of them manning 1 stove each outside it. The plates are covered with a thin plastic film to ease the cleaning process and the used dishes are stacked at one side and to my surprise, all were pretty clean - not much left over food in them . It only goes to show, customers like the food they eat.
The cashier writes down the orders on paper ( may be an electronic machine will help things smoothen out but given that its been open only about 10 days, i hope this will be done soon ) and the cook churns out the dosas.
The USP of this place is the 111 varieties of dosas it sells. I had the spring roll mushroom dosa and the pav bhaji dosa last night.
While the dosas were good, more attention has to be given to the filling inside. The pav bhaji never tasted like pav bhaji and the spring roll well, it was something else.
Me being a dosa lover, dint find it difficult to eat them, but if the good run has to be sustained, more effort has to be given to the little things that make dosa place stand apart.
For now it has no competition around, but its only a matter of time before it will have its hands full and these little things will take it a long way when the going gets competitive...
Looking forward to the dosas here but with more finesse...
